Easy winter recipe: Hot chocolate dump cake

December 19, 2016

Did the words "easy" and "chocolate" grab your attention? I thought so.

I recently found this dessert on Pinterest and decided to make it for a Christmas party I was invited to. It was definitely one of the easiest recipes I've made!

It seems that all holiday parties have cookies and cupcakes, but I wanted to go for something a little different. Although I love making cookies this time of year, I thought this cake would still be "holiday friendly," because HOT CHOCOLATE, that's why.

Here's what you need:

  • 1 package (3.4 oz) Jell-O chocolate-flavor instant pudding
  • 1 1/2 cups milk
  • 1 box Betty Crocker SuperMoist chocolate fudge cake mix
  • 4 cups mini marshmallows
  • 1 cup semisweet chocolate chips
  • 2 teaspoons dry hot chocolate mix

Now, get bakin':

1 | Heat oven to 350°F. Spray bottom and sides of a 9 x 13 pan with cooking spray.

2 | In a large bowl, beat dry pudding and milk with whisk for two minutes. Stir in cake mix and 2 cups of the miniature marshmallows until combined. Spread batter evenly in bottom of pan. Scatter chocolate chips evenly on top.

3 | Bake 30 to 35 minutes, or until toothpick inserted in center of cake comes out almost clean.

4 | Immediately sprinkle remaining 2 cups miniature marshmallows on top. Cool completely in pan. (About 1 hour)

5 | Sprinkle top lightly with dry hot chocolate mix just before serving.

To me, this tasted more like a brownie than a cake because the pudding gave it a thicker consistency, instead of something spongy. I loved that the cake was full of chocolate chips and marshmallows. The hot chocolate mix sprinkled on top gave it a nice sugary crunch.

The holidays may be stressful, but the dessert you need to make doesn't have to be. Whip this up in an hour and your guests will be begging for seconds.

Ho ho ho,
